dengan berkembangnya jaman, nasi Krawu sendiri juga mengalami perkembangan.
Bukan berarti terjadi penambahan elemen baru di dalamnya, perkembangan tersebut
adalah cara penyajian dan kesan rasa yang dihasilkan. Seperti contoh kasus
bahwa nasi krawu sendiri berasal dari masyarakat Madura yang tinggal di Gresik,
tanpa meninggalkan cita rasa khas kuliner Madura yang asin dan pedas. Namun lambat laun
penjual nasi krawu juga berasal dari berbagai macam daerah, seperti masyarakat
Jawa asli yang berjualan nasi krawu dan menghasilkan kesan yang cenderung
manis, gurih, dan sedikit pedas.

Kasus selanjutnya adalah resep nasi krawu
yang diturunkan turun temurun dari nenek ke anaknya dan seterusnya. Mengingat
prinsip yang berkembang dari tempo dulu adalah "Banyak anak, banyak
rejeki". Maka hal tersebut juga mempengaruhi perkembangan penjual nasi
krawu dalam lingkup keluarga mereka, di mana setiap anak ingin membuat tempat
makan nasi krawu mereka tersendiri. Meskipun dengan resep, bahan dan proses
memasak yang dilakukan di satu tempat yang sama, hal tersebut tetap memberikan
kesan yang berbeda bagi setiap penikmat nasi krawu. Entah dikarenakan oleh
sugesti dari si penikmat itu sendiri ataupun cara penyajian dan suasana di tiap
tempat makan yang berbeda.
Perubahan lain adalah harga yang meningkat, dahulunya nasi krawu dibuat dengan tujuan menciptakan makanan yang ekonomis, praktis, dan tahan lama untuk memenuhi kebutuhan kuli pelabuhan. Setelah sekian lama dan keadaan ekonomi pun ikut berubah, harga dari nasi krawu yang relatif murah dengan porsi sedikit, menjadi semakin mahal tetapi porsinya tidak banyak bertambah. Hal tersebut juga mungkin dipengaruhi oleh faktor lainnya seperti bertambah populernya nasi krawu di kalangan masyarakat sehingga banyak orang dari luar Gresik, bahkan wisatawan asing juga mencari nasi krawu. Selain itu juga sudah banyak orang yang menjual nasi krawu ke luar Gresik, bahkan sampai ke kota besar seperti Surabaya.
Dilihat dari segi penyajiannya yang dulunya menggunakan cara tradisional dengan dibungkus daun pisang saja, dan sekarang akhirnya berubah lebih modern dengan menggunakan piring yang dilapisi daun pisang. Bahkan inovasi bentuk pun tidak dapat dihindari, seperti contohnya sebuah proyek yang memenangkan beberapa penghargaan atas inovasinya menciptakan Burger Krawu. Dipadukan dengan gaya kuliner Barat tanpa menghilangkan sifat dasar dan rasa dari nasi krawu itu sendiri.
Yang terakhir adalah tempat penjualan nasi krawu pun ikut
berkembang, yang pada mulanya hanya dijual keliling di sekitar area pelabuhan
kemudian berkembang menjadi warung kecil. Seiring dengan kemajuan Kota Gresik,
banyak penjual yang merenovasi warungnya menjadi depot bahkan restoran.
Nowadays, krawu rice also got its own development. It doesnt mean that they add more new elements inside of it, but its about how do they serve it and the taste. Just like the story about krawu rice came from Madura people who lived in Gresik, without eliminating the Madura culinary taste (salty and spicy). But later on, krawu rice seller came from other regions, for example the Javanese people. They usually sell krawu rice with a sweet, tasty, and a little bit spicy taste.
Viewed in terms of the serving way, krawu rice was served by using traditional way wrapped in banana leaf. But now it changes to more modern way by using banana leaf covered plate. Even the other kind of innovation are inevitable, for example there are a project that won some awards because of their innovation in creating krawu hamburger, named "Burger Krawu". They mixed the western culinary style and appearance without eliminating the original taste of the krawu rice itself.
Last is about the selling places that also got changed. In the beginning, krawu rice only sold around the harbor area for the stevedor. Later on it changes into a small depot. In the meantime along with the Gresik city development, many of the seller renovated their small depot into a bigger one and even a restaurant.

Eventhough they used the same family recipe including the same place to do the cooking process, the final taste still diffrent from each other for the krawu rice fans. The reason should be just the fans itself or how do they served it in each diffrent places(depot).
The other change is the price increases, krawu rice was made with goal to create a cheap, easy to carry, and last long for the stevedor. And because of the economic changes, after a while the cheap price with small portion has changed into more expensive but same portion. That change maybe also caused by the other factors, such as the popularity of krawu rice among the society. Even the international visitors/tourists also like to try krawu rice. Furthermore, many sellers tried to sell krawu rice beyond Gresik, such as Surabaya.
